Bethlehem offers a ton of great brunch spots. I checked out
Blue Sky this weekend, which has never failed at making a delicious meal. The always crowded cafe offers unique combinations, like cream cheese stuffed french toast and sweet potato quesedilla's for breakfast. They use fresh ingredients for the gourmet cooking, and the cozy spot is filled with a the great smell of homemade cooking. I went for the breakfast burrito: eggs, beans, and salsa, all wrapped in a whole wheat tortilla.
One of my friends got french toast which was exceptionally good, too. So what does this compare to in New York? I'll say
Good Enough to Eat, on the Upper West Side. Good Enough to Eat is similar to Blue Sky, with a homemade feeling and interesting combinations for brunch. One of the favorites at Good Enough to Eat is the Gramercy Park omelette, filled with Granny Smith apples and Vermont cheddar cheese. Good Enough to Eat is a perfect spot for brunch, although you usually have to wait on line to get a table, but definitely worth it because you get two buttermilk biscuits with strawberry butter with your dish. Perfect.
